The Shoals Club officially reopened its doors this past Friday night to members and temporary members. It was great to share the evening with both old friends and new faces. From the improvements to our facilities, to the addition of a new chef, we couldn’t be more excited about the upcoming 2012 season.
With the arrival of Chef Robbie Nicolaisen and the oversight of Bald Head Island Limited, LLC Resort Operations Director Woody Walls, much energy has been devoted to creating new menus for all of our dining venues, from the Dining Room to the Lounge to the Sandbar Grille.
In the Dining Room, you’ll see even more emphasis on regional cuisine and fresh local seafood. We’ve expanded our relationships with vendors who share our vision for uncomplicated, straightforward ingredients of the highest quality, and are utilizing locally sourced and sustainable products where available. NC flounder, Carolina white shrimp and free range chicken are menu highlights and are all sourced from nearby, while natural beef and acorn fed Berkshire pork are produced on small farms and ranches known for their quality. Even our Junior Menu has been revamped with imaginative cuisine and healthy options for those 12 and under. We can’t wait for you to taste the results of the attention our Culinary and Beverage staff has given to identifying the best ingredients and most thoughtful preparations available.
Our Lounge Menu has also been revamped with a tapas-style approach that’s perfect for those desiring lighter fare or a casual evening out. From NC oysters on the half shell to fried green tomatoes, you’ll want to order several plates to share. Also new for this season, we’re featuring a number of craft beers on tap from breweries located across North Carolina. As you have a chance to sample our new brews, please let us know your favorites.
In the coming weeks, we’ll also share our expanded and improved Sandbar Grill menus. We’ve incorporated the great feedback we’ve received from members and guests and hope you’ll be pleased with our new approach.
Don’t forget to mark your calendar for our first Member’s Dinner of the season on Friday, March 30, which offers a delicious menu featuring potato leek soup, baby arugula salad and pork tenderloin. Reservations can be made by calling 910-454-4850.

At the Shoals Club we’re busy preparing for the 2012 season, which officially kicks off on Friday, March 23 when we reopen our doors to members.
We are most pleased to announce two exciting changes to our Culinary and Beverage operations. Joining the Shoals Club staff as our new Executive Chef is Robbie Nicolaisen, a native of Cary, NC, who was selected from an applicant pool of more than 50 outstanding candidates. A graduate of Johnson & Wales Culinary Institute in Charleston, SC, Chef Nicolaisen has 17 years of industry experience in the Carolinas, including his most recent position as Executive Chef at Sea Trail Golf Resort and Convention Center. We can’t wait for Robbie to showcase his talent for local and regional cuisine for you in our Dining Room.
Along with a new chef, we’re delighted to announce that F.E. “Woody” Walls was recently promoted by Bald Head Island Limited, LLC to Resort Operations Director. In his newly expanded role, Woody will provide direct support to the Shoals Club’s Culinary and Beverage operations. A native of Florida, Woody grew up in Brunswick County, NC, and graduated from UNC-Wilmington. Woody brings 25 years of industry experience in 4-star/4-diamond properties along the Atlantic coast and at French Lick Springs Resort and Casino in Indiana. In all, Woody has spent 9 seasons with Bald Head Island Limited, LLC successfully managing and directing a variety of food and beverage operations. At the Shoals Club we’re very excited about the skills and leadership that Robbie and Woody will bring and the new programs that will be introduced to further enhance the member and guest experience.
Additionally, we’re proud to welcome back Morgan Avery in his second season as Sous Chef at the Shoals Club. Prior to joining the Shoals Club culinary team, Morgan served for three seasons as Sous Chef at the River Pilot Café. A native of High Point, NC, Morgan brings 15 years of industry experience from a variety of fine establishments in the Wilmington area.
When the Shoals Club reopens, we’ll be unveiling a new A La Carte/Lounge Menu developed by our culinary team. We also ask you to mark your calendar for our first Members Dinner on Friday, March 30 at 6 p.m. The four-course dinner, which is open to full members and their guests only, promises to be a delightful introduction to our new chef’s talents.
Along with making changes to our culinary team, over the last two months we’ve worked hard to spruce up the Shoals Club in a variety of ways, from deep cleaning to taking care of minor maintenance issues. We’ve added two new outdoor showers on the main pool deck, which have built-in “sand mats” to help keep the Shoals Club pools cleaner. Additionally, a wooden pergola was constructed over the Sandbar Grille deck area to provide shade and make dining by the pool that much more enjoyable.
Prior to the Shoals Club reopening on March 23, we invite you to join us this Thursday Night at the Howl at the Moon Sunset/Moonrise Party, which the Shoals Club is sponsoring. We’ll all gather at beach access 39 from 5:30-7:30 p.m. to share good food and good company. I’ll be there, along with Chef Nicolaisen, who is bringing a couple of appetizers and who looks forward to meeting property owners.
Please keep in mind that the Shoals Club is fully staffed as we’re preparing to reopen, so don’t hesitate to call or email if you have any suggestions or questions. We can’t wait to kick off an outstanding 2012 season with you!

Happy New Year to all Shoals Club members! We hope 2012 is off to a great start for you and your family. It was wonderful to see so many members on the island during the holidays. We wanted to take this opportunity to thank all members for the tremendous support you showed the Shoals Club in 2011. Your comments, encouragement and great feedback are helping us to improve the Shoals Club facility, our food and beverage offerings, and our recreational programs for 2012.
The Shoals Club will reopen for the season on Friday, March 23, 2012, and we will be holding our first Members’ Dinner of the season on Friday, March 30. We hope you can make plans to attend. Along with more Members’ Dinners, we have additional Members’ Socials, Chef’s Tables and Wine Dinners planned for the coming year. In March we’ll be circulating our complete calendar for 2012, which will have all of these great events highlighted, along with our signature holiday parties and special dinners.
While the Shoals Club is closed to members over the next several weeks, we’ll take advantage of that time to do a deep cleaning of the clubhouse and to take care of minor maintenance issues. We are also pleased to announce the addition of two new outdoor showers on the main pool deck-coming in from the beach, rinsing off, and enjoying the pool has never been easier. Along with contributing to the convenience of members, the outdoor showers, which will have built-in “sand mats,” will help to keep the Shoals Club pools cleaner. Additionally, a handsome new wooden pergola is being constructed over the Sandbar Grille deck area (see image above). The pergola will provide shade for diners and will make enjoying a meal by the pool that much more enjoyable.
The Shoals Club remains staffed in the off-season, so please don’t hesitate to call or email if you have any suggestions or questions. Again, thank you for your support in 2011, and we look forward to seeing you this spring when our doors reopen on March 23.

If you’re celebrating Thanksgiving on Bald Head Island, it’s not too late to reserve your seating for the Shoals Club’s Thanksgiving Dinner Buffet on Thursday, November 24.
Chef Turner has designed an elaborate buffet sure to delight any palate—download a complete menu here. The buffet is a great value at $25 for adults, $15 for children 5-12, and free for children 4 and under, plus tax and gratuity. Seatings are still available for 1 p.m. and 3 p.m.–the 5 p.m. seating is sold out.
For your convenience, the Shoals Club will be open Wednesday, November 23 through Sunday, November 26 the week of Thanksgiving. Visit the Shoals Club website for complete holiday hours.
You’ll also want to mark your calendar for the Shoals Club’s Annual Holiday Party on Saturday, December 3. A social hour starts at 6 p.m., with food stations opening at 7 p.m., and live music until 9:30 p.m. A delicious carving station will feature marinated hanger steak, a fresh seafood station will showcase shrimp and scallops, and beautiful soup, vegetable and salad stations will round out the fare. Finally, you won’t want to miss the Shoals Club’s divine New Year’s Eve Dinner on Saturday, December 31, that includes a Champagne toast with dessert for $59.95 per person, plus tax and gratuity. This Thanksgiving the Shoals Club is pulling out all the stops with a lavish Thanksgiving Buffet on Thursday, November 24.
Chef Turner’s menu features traditional holiday favorites like herb roasted turkey, sweet potato hash and braised collard greens, along with inventive dishes like cranberry-stuffed pork loin, crabmeat dressing and shaved truffle macaroni & cheese. A beautiful dessert tray featuring a variety of pies and assorted cookies will satisfy any sweet tooth. View a detailed menu here.

Work off your Thanksgiving meal at our Turkey Trot Fun Run on Saturday, November 26. Registration is at 1:30 p.m. and the race starts at 2 p.m. Meet at the East Beach access near the intersection of South East Beach Drive and Station House Way. Fall’s picture-perfect weather is here, and there’s no better time to be at the Shoals Club. Be sure to mark your calendar for these exciting upcoming events.
Thursday, September 29, Chef Turner and his talented culinary staff will be serving a special Wine Dinner at 6 p.m. The delicious menu includes savory items like crispy shrimp with a basil chili lime glaze, endive macadamia salad, pan seared halibut or bronzed scallops, and a delectable coffee gelato with a Belgian chocolate tuille for dessert. Wines will be paired to complement the courses. $50 per person, tax and gratuity not included.
As a part of N.C. Wine & Food Weekend on Bald Head Island, October 14-16, the Shoals Club will be the featured venue for a scrumptious Wine Dinner on Saturday, October 15 at 6:30 p.m. N.C. wines will be selected to enhance each course of a gourmet prix fixe menu. Open to adults only. $80 per person, plus tax and gratuity. Call early to ensure your reservation.
Finally, be sure to join us at 6 p.m. on Saturday, October 29 for the Shoals Club Halloween Party. Costumes are optional, so come dressed up or come as you are and enjoy a delicious buffet that will include beef tenderloin, baked oysters on the half shell, steamed mussels and little neck clams, miniature beef wellingtons, plus lots of kid-friendly items like chicken tenders and mac ‘n’ cheese wedges. This year’s annual Shoals Club Labor Day Members’ Celebration definitely lived up to its billing! Ideal weather, fabulous food and drink, and the musical sounds of summer greeted members and their guests as they arrived at the 9th Annual Labor Day Members’ Celebration. The evening was so beautiful that the scene was almost magical - from the white lights and candlelight glowing on the pool deck, to the white caps visible on the nearby shoals. A party is a party, but a gathering at one of Bald Head Island’s most picture-perfect locations is an event, and this event did not disappoint.
Over 460 members and their guests gathered poolside, on decks and porches, and in the cooler Shoals Club interior to celebrate the close of the summer season. It was a great time for visiting with old friends and neighbors and making new island acquaintances.
Everyone enjoyed the culinary delights presented poolside by Chef John Turner and his staff. There was truly “something for everyone.” Tables featuring antipasto, sushi, and fresh pasta were popular gathering spots. A seafood station featured delicious shrimp, oysters on the half shell, crab legs, crab cakes and salmon. A carving station featuring slow roasted beef tenderloin remained busy throughout the evening. In the main dining room, with its new window formation offering beautiful northward views, guests sampled many fresh baked desserts including fudge brownies, a variety of cookies, cheesecake, and the very popular coconut and cranberry macaroons.
The dance floor was a lively spot as guests moved to the sounds of oldies, popular tunes, and beach music classics performed by the talented Carl Newton and the Fifth Avenue Band. Members who weren’t shagging were swaying to the music or singing along to their favorite tunes.
Labor Day weekend is a special time for all Bald Head Islanders. We nostalgically celebrate the final days of summer, yet also anticipate with pleasure the return of the crisp air and blue skies of a quieter fall. This year, nature gave us perfect weather and the Shoals Club provided the perfect setting for members to celebrate this annual transition.
